
Meat on the skewer regional style dish

The Madeiran espetada is, without a doubt, the best-known and most consumed regional dish on the Island of Madeira and Porto Santo.
The meat must be tender, preferably from Acém, Empty, Rump or Fillet, it must be juicy and fatty, (known as marbled meat) and must have a layer of fat on the part exterior of the piece (what we call a flower).
After preparing the ideal piece of meat, it must be cut into small pieces, of a more or less uniform size, so that it can be placed on the spit where it will be roasted. With the coals in a fiery color, each skewer is gradually rotated until each piece of meat takes on a golden and appetizing tone.
Estetada Madeirense, at QUINTA ESTAÇÃO RESTAURANT, is normally accompanied with fried corn, cake do caco, salad and fries.

OUR RECOMMENDATION:
Start your meal in the best way with a bolo do caco with garlic butter for starters. For the main dish it's easy, a tender and succulent kebab of regional meat accompanied by fried corn, fries and salad.
